The colors from the vegetables are so vibrant and blend so well together. You have a crunchy, soft and sweet texture that blends so well together leaving you wanting another bite.

To help cook the vegetables at the same rate, make sure to cut them into similar and smaller sized pieces.

In a medium-sized skillet add 1 tsp olive oil and add mushrooms. Start tossing all the vegetables separately that take a little longer to cook like carrots, beans, onions and capsicum.

After tossing all the vegetables, in a separate pan/skillet add 2 tablespoons olive oil over medium-high heat. Add chillies, garlic and ginger. Sautee 2-3 minutes until translucent.

In a small bowl whisk together vinegar, ketchup, red chilli, soya, oyster sauce, maple syrup and cornstarch

Pour over veggies and cook until the sauce has thickened.

Add chopped green onions if desired and serve them with hot steaming fried rice. Enjoy!
